Next, I pureed them in my manual food processor.
Then cooked it for a while, adding some fresh lemon juice and a couple tablespoons of raw honey.
I waited till that cooled, then whipped it all together with a couple sticks of unsalted butter, and added a pinch of salt to finish 'er off.
And BAM! There ya have some blueberry honey butter that's pretty dang good, if ya ask me. I love the color of it too--ain't it purdy?
Perfect for spreading on homemade blueberry zucchini bread adapted from this recipe. (Mine was made with buckwheat and oat flours instead of white flour, and honey in place of sugar.)
That's some finger lickin' good stuff right there!
