Have you ever heard of baked oatmeal? I never had until my family and I moved to the PA Dutch country. Apparently it's a favorite and common Amish breakfast. It is delish and also healthful. And super easy too. Ry loves to help me make it. So here's the recipe I use. It's from my SIL Ashley and it's one of our favorite breakfasts. I did tweak a couple things. Instead of canola oil, I use refined coconut oil, (has no taste but is very beneficial to your health) a sprinkle flax of seeds, (the more fiber the better!) and usually use dried fruit (love the tart).
¼ cup butter, softened
¼ cup coconut oil (melt it before you add to recipe)
¾ cup brown sugar
Beat these ingredients together
3 cups rolled oats
2 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon
¾ cup milk
Chopped apples, berries, or dried fruit
Sprinkle of flax seeds
Combine and pour into a greased 9 x 13 pan. Bake at 350 for 30 min.
I added fresh blueberries to this batch.
I like mine a little crunchy on top so I'll leave it in for a little longer. It's great right out of the oven with some fresh cold milk poured on top or you can eat it later for a dessert with ice cream or whipped cream. Yum both ways!
